Dassai Blue “50” is crafted at the New York-based Dassai Blue Sake Brewery using Yamadanishiki rice, and pristine spring water from the lush Hudson Valley. The rice grain is milled down to half its original size. Flavors of candied pineapple and lemon swirl with notes of vanilla and cantaloupe, like a beautifully assembled fruit tart. A slight briny taste on the finish adds some depth.
